No Flour Peanut Butter Cookies
2 cups peanut butter (see note)
1 1/2 cups natural cane sugar
1/2 cup brown sugar
2 egg
2 teaspoon baking soda
1 1/2 teaspoons vanilla
additional sugar for rolling

Preheat oven to 375 degrees°F.

Mix peanut butter, Cane sugar, brown sugar and vanila.
Blend in the eggs, mold into large ball

Roll tiny walnut sized balls in your hands, Place on the parchment paper.
Flatten slightly with a fork, leaving a criss-cross pattern.

Bake 10 minutes, remove sheet from the oven, let cool for 10 minutes. Remove and serve!

Delicate Mushroom hors d’oeuvres

Chicken Breast, One
Goat Cheese, 1/2 Pound
Rosemary, 1/2 tsp
Black Olives, 1/2 cup
Olive Oil
Thyme to taste
Mushrooms, about 2 dozen medium

Dice a single cooked chicken Breast, should be finely minced
Dice one Half pound of soft unripened Goat cheese
add one half teaspoon of rosemary and continue dicing
add one quarter cup of black olives pitted (dice these too)
wash and prepare mushrooms by pulling stems out
let dry
pour olive oil into the cavity, pour excess into next mushroom, repeat
stuff minced mixture into the mushrooms, to the top and a little above
season with thyme all over

bake in the oven, 400 degrees for five minutes
bake for ten minutes 300 degrees
broil until tops start to singe lightly, another two minutes approx.

Honey Ginger Pork Chops

Honey Ginger Pork Chops

Grate half a large ginger, coarsely.
Put in a large bowl
drizzle honey over to saturate
mix in half a tablespoon of rosemary
place three thick pork chops on cooking pan
pile the ginger honey mixture over top
dash thyme on top of the chops

place in oven at 450 degrees, under the broiler
watch the temperature at 140 degrees take the chops out of the oven
moved the ginger topping to the bowl, flip the chops and cover them again with the ginger.

Continue broiling until it reaches 160 degrees

take from the oven and serve hot.

Serve with a mixed salad, mandarin oranges and sliced avocados.

Steamed Vegetables with Pomelo Sauce

Sauce:
4 cloves garlic, chopped
1/4 cup extra-virgin olive oil
1/2 cup Pomelo Juice
1/4 cup chopped fresh cilantro leaves
1 teaspoon Jurassic Sea Salt

Vegetables:
1/2 bunch broccoli, cut in large florets
1/2 bunch cauliflower, cut in large florets
2 carrots, cut in thick slices
1 yellow or zucchini squash, cut in thick rounds
1/2 to 1 head fennel, cut into thin wedges
1 bunch White Asparagus
8 cloves garlic
1 bunch scallions

For the sauce: Put the garlic and olive oil in a small pan on HIGH until the garlic starts to turn is golden, 1 to 2 minutes.

Stir in the Pomelo juice, cilantro, and salt and set aside until ready to serve.

For the vegetables: Pour 1-inch or more of water in a wok or skillet and bring to a boil over medium-high heat. Place the vegetables in a bamboo or collapsible steamer. Set the steamer over the boiling water, cover, and cook for 5 to 8 minutes, or just until the vegetables are crisp tender. Serve warm or at room temperature with the sauce.

Pan Seared Tuna Pomelo Extravaganza

2 big handfuls fresh cilantro leaves, finely chopped
1 teaspoon grated fresh ginger
1 garlic clove, grated
1/4 Cup Pomelo Juice
2 tablespoons soy sauce
Sea salt and whole black pepper corns
1/4 cup extra-virgin olive oil
1 (16-ounce) block sushi-quality tuna
1 ripe avocado, halved, peeled, pitted, and sliced

Serves four

In a mixing bowl, combine the cilantro, ginger, garlic, pomelo juice, soy sauce, salt, pepper, and 2 tablespoons of olive oil. Let sit.

Blend the salt and whole pepper corns, to a light meal consistency, put aside in small dish.

Pour the mixing bowl with cilantro etc. into blender. Blend on high until ingredients are frothy.

Place a skillet over medium-high heat and coat with the remaining 2 tablespoons of olive oil.

Season the tuna generously with salt and pepper. Lay the tuna in the hot oil and sear for 1 minute on each side to form a slight crust.

Pour 1/2 of the cilantro mixture into the pan to coat the fish. Serve the seared tuna with the sliced avocado and the remaining cilantro sauce drizzled over the whole plate.

Notes: The beautifully colored crystals in the Jurassic Sea Salt are full of important trace minerals and elements for good health and amazing salt flavor. Check your gourmet store for exotic salts.
